Unfettered by artificially-flavored syrups and mixes, the classic daiquiri is much simpler than its more familiar cruise ship-going cousin, the frozen daiquiri, but possesses a refreshing appeal all its own. Begin with 2 ounces of the Papagayo Rum of your choice. Papagayo Añejo is ideally suited, its rich aged flavor pairing perfectly with the citrus of the lime, but Papagayo Platinum Rum can work as well for a light, clean variation of the cocktail, and for a touch of flavorful chili kick use Papagayo Spiced Rum. In a shaker, combine the rum, the juice of a quarter of an organic lime, and 0.5 ounces of simple syrup with ice. Stir. Strain into a martini glass. Top off with soda and garnish with a wedge of lime.
