The Ginger Sparkler

Dice a three-inch piece of fresh ginger and infuse it in 500mL of Vodka 14 by placing the ginger directly in the bottle, or in another sealed glass container, and allowing it to steep at room temperature for 48 hours. To mix the cocktail, pour three ounces of the infused Vodka 14 and half an ounce of organic agave nectar in a shaker over ice. Simple syrup may be substituted if agave is not available. Strain and pour into a lowball glass over ice, topping off with an ounce and a half of sparkling water. Garnish with finely grated ginger.
