The Northwest Cooler

Start with the juice of two fresh peaches or two ounces of peach nectar in a shaker. Add 1.5 ounces of Juniper Green Gin, half an ounce of agave nectar, three dashes of rhubarb bitters and ice. Shake vigorously and strain into a chilled martini glass. Float a sprig of fresh rosemary, slapped to release the oils, as a garnish.
