The Caipirissima is the rum variant of the Brazilian classic, the Caipirinha, which is traditionally made with Cachaça, a sugar cane spirit. Because Papagayo Platinum Rum is also produced exclusively from sugar cane, it is uniquely suited to this cocktail. Begin with two fresh limes, halved, in a shaker. Muddle and add 2 teaspoons of organic cane sugar and 2 ounces of Papagayo Platinum Rum. Shake over ice. The Caipirissima is traditionally served on the rocks in a lowball (limes and all), but can also be strained and served as a martini.
