This delicious organic cocktail comes to us from mixologist O’Rya Hyde-Keller at Natural Solutions magazine. Begin with 1 gallon of organic apple cider in a large pot. Add 3 organic cinnamon sticks, 4 organic whole cloves, and 4 organic allspice berries, the peel of an organic lemon and an organic orange, cut into strips. Bring to a boil, and let simmer for 5 minutes. Turn off the heat and allow the mixture to sit for 15 minutes, and then mix in 32 ounces (about 1 liter) of Papagayo Organic Spiced Rum. Strain into mugs, garnished with cinnamon sticks. Makes 20 servings. Recipe may be halved for a smaller portion.
