This recipe calls for lavender honey syrup, which can be made by heating 1 part water, 1 part organic honey, and half a teaspoon of dried lavender blossoms and steeping for 5 to 7 minutes before straining out the lavender. Lavender honey may also be substituted. Combine 2 ounces of Juniper Green Organic Gin with 1 ounce of the lavender honey syrup and 0.5 ounces of fresh organic lemon juice. Shake all the ingredients with ice and strain into a martini glass, garnished with a leaf of mint.
