The French 75

The French 75 is a classic cocktail said to have been invented at the New York Bar in Paris in 1915 and is named for a particularly potent piece of World War I field artillery. Here we offer a decidedly peaceful organic variation. Begin with 1 ounce of Juniper Green London Dry Gin in a shaker. Add a teaspoon of simple syrup, and half an ounce of lemon juice. Shake. Pour into a highball glass over small pieces of ice, and top off with 4 ounces of Giol Organic Prosecco. Stir and garnish with lemon.
