
This cocktail, originating at Boulder sushi hotspot Hapa, stars fresh thyme, an easy-to-make ginger syrup, and birch liqueur. Start by making your ginger syrup, which involves simply cooking fresh grated ginger in water with sugar, just as you’d make simple syrup. Strain the mixture and allow to cool. Next, mix 1.75 ounces of Vodka 14 in a shaker with a quarter ounce of Root birch bark liqueur, two wedges worth of fresh lemon juice, and half an ounce of the ginger syrup. Shake. Pour into a Collins glass with ice, then garnish with a spring of fresh thyme. Top off with soda water and stir gently before serving.
